Dudhi paratha with coconut chatni is my kid’s favorite dish. Dudhi paratha can be a very handy and good to carry food. It is difficult to eat outside food if you are not that much comfortable eating outside. Also for kids its always a risk to make them eat outside. If you just cook Dudhi curry, no one likes to eat it but Dudhi paratha looks good and also tastes good. It is also very healthy vegetable.
One of my favorite veg recipe which is healthy as well as tasty. My kid love this dudhi paratha, Normally kids hate to eat dudhi but with recipe they just love to eat just try once. Dudhi is very healthy vegetable it content 97% water, lots of fiber and vitamins. Next i added carrot which is rich source of vitamin A.

STEP-BY-STEP INSTRUCTIONS WITH PICTURES
For making Dudhi paratha we need wheat flour, grated dudhi,carrot, carom seeds, turmeric powder, coriander powder, cumin powder, chilly powder,Oil, Salt to taste.
Take 2 cups of wheat flour in mixing bowl and add 1 cup of grated dudhi and 1 cup shredded carrot.
Then add ½ tbsp carom seeds, ½ tbsp turmeric powder, ½ tbsp coriander powder and ½ tbsp cumin powder, 1 tbsp chilly powder and salt to taste.
Mix it all together. Remember Dudhi and carrot content lots of water, because of that add small small quantity of water and start to make dough.
Once dough is ready, make small balls take one ball on rolling boar dust some flour make small chapati.
Heat pan and place paratha on it. After 30 second flip paratha and put some oil on it.Then flip again. Let paratha cook properly on both side.
Dudhi Paratha is ready serve with green chutney/ketchup or dahi.
