Chicken biryani or chicken chi akhani is the most simple recipe. It is delicious, simple and super quick, chicken chi akhani here akhani word used because this recipe is super quick and super easy.

This recipe traditionally made in most of all  Maharashtrian muslim families while small functions. In Maharashtrian muslim family this recipe is also used as alternative for hydrabadi biryani, this recipe contain less spices, less oil. Therefore its healthier than other biryani, you can make this recipe on weekend.

Ingredients

  • • ½ kg chicken
  • • 2 cups of basmati rice
  • • Whole spices or Khada masala- 4 black cardamom, 4 green cardamom, 1 cinnamon, 3 bay leaves, 5-6 pepper corn, 3 star anise.
  • • 4-5 green chilly
  • • 1 cup of coriander leaves
  • • 1 tbsp of oil
  • • 1 tbsp of ghee
  • • 1 tbsp garam masala or biryani masala
  • • 2 tbsp cashew
  • • 1 cup sliced onion
  • • 3 cup of Hot water
  • • Salt to taste

Instructions

  1. Take 4-5 green chilly and 1 cup of coriander leaves in grinder and make fine paste
  2. Marinate chicken with green chili and coriander leaves paste for 20 minutes
  3. Wash rice drain water and set aside for 10 minutes
  4. Boil 3 cup of water separately
  5. Heat up 1 tbsp of oil and 1 tbsp of ghee in kadhai on medium heat
  6. Now add Whole spices - 4 black cardamom, 4 green cardamom, 1 cinnamon, 3 bay leaves, 5-6 pepper corn, 3 star anise. Sauté until spices become little darker
  7. Now add 1 cup sliced onion sauté until they are translucent
  8. Add cashews and saute.
  9. then add garam masala and salt sauté until oil begins to separate from masala.
  10. Add marinated chicken mix until it change color.
  11. Now add soaked rice and mix well until all grains become green.
  12. Now add 3 cup of warm water, mix well and slow down heat.
  13. Cover pot or kadhai tightly, chicken biryani will be ready to eat within 7-9 minutes.
  14. Our chicken biryani or chicken chi akhani is ready to eat
  15. Serve with raita or chicken curry

STEP-BY-STEP INSTRUCTIONS WITH PICTURES

We need ingredients for making chicken biryani or chicken chi akhani are ½ kg chicken, 2 cups of basmati rice. Whole spices or Khada masala (4 black cardamom, 4 green cardamom, 1 cinnamon, 3 bay leaves, 5-6 pepper corn, 3 star anise). 4-5 green chilly, 1 cup of coriander leaves, 1 tbsp of oil, 1 tbsp of ghee, 1 tbsp garam masala or biryani masala, 2 tbsp cashew, 1 cup sliced onion, 3 cup of hot water, salt to taste.

 

Making green masala

Take 4-5 green chilly if you need more spicy so you can add more green chilies because we are not using any red chili powder.  Add  1 cup of coriander leaves in grinder and make fine paste.

Marinate chicken with green chili and coriander leaves paste for 20 minutes.

While making green masala you can add mint leaves, Because traditionally they add lots of pudina or mint leaves with coriander leaves. So it help to reduce heat of chicken, you can add mint leaves for making green paste. I skip this step because my kid does not like Mint taste 🙂

 

 

Wash rice drain water and set aside for 10 minute while that boil 3 cup of water separately.

 

 

Heat up 1 tbsp of oil and 1 tbsp of ghee in kadhai on medium heat.

 

 

Now add Whole spices – 4 black cardamom, 4 green cardamom, 1 cinnamon, 3 bay leaves, 5-6 pepper corn, 3 star anise. Sauté until spices become little darker because it increase taste.

 

 

Now add 1 cup sliced onion sauté until they are translucent. Add cashews and saute.

 

 

Then add garam masala and salt sauté until oil begins to separate from masala.

 

 

Add marinated chicken mix until it change color.

 

 

Now add soaked rice and mix well until all grains become green.

 

 

Now add 3 cup of warm water, mix well, slow down the heat and cover pot or kadhai tightly and finally chicken biryani will be ready to eat within 7-9 minutes.

 

Our chicken biryani or chicken chi akhani is ready to eat. finally served with raita or chicken curry.
